Crabcakes

500g fresh cooked white crabmeat
400g white breadcrumbs
1/2 yellow pepper chopped finely
6 spring onions chopped finely
2oz grated fresh ginger
grated rind of 1/2 a lemon
2 eggs
2 tablespoons mayonnaise
 

Mix together the crabmeat, breadcrumbs and vegetables in a large bowl.

Beat the eggs and mayonnaise together and add to the mixture. Form into 3oz balls,then flatten down and fry in a little oil until golden brown and heated through.

Serve with salad and sweet chilli sauce.
